Upon completing his service, Charles moved to Halifax, Nova Scotia where he met his soon-to-be wife Alfreda Dixon. They later moved to Montreal, Canada where they raised their family before ultimately settling in Houston, TX 38 years ago.

He worked to perfect his craft as an Executive Chef at various establishments in Montreal, Canada and Houston, TX, as well as honing his skills with training at one of America’s best culinary institutions in New York.

Charles was a hardworking man who lived everyday with positivity and determination not allowing his illness to prohibit him from doing the things he loved.
Charles was a man of God that found a spiritual home as a member of Notre Dame Catholic Church. Along with his passion for cooking, he also enjoyed casino trips and spending time his family. One of the things he loved most was watching sports with his family.
